Siempre Rebel Cask is a prohibition-style rebellious range of aged expressions where we age our Siempre Supremo Tequila in everything from rare bourbon casks to french dessert wine and even ex-maple syrup barrels. Each batch is dangerously unique and extremely scarce, making Rebel Cask stand out in a traditionally conservative category. Rebel Cask is produced in Tequila, Mexico where our barrelhouse has the capacity of housing hundreds of unique and lawless expressions.
Tasting Notes
We take supremo agaves and bake them in traditional brick ovens using locomotive-style steam to heat. Once fully cooked, they are unloaded and crushed using two methods, depending on our mood that day. One employs a tahona (large wheel made of volcanic stone) and the other, a modified mill that simulated the act of crushing cooked agave by hand with a wooden mallet.The collected juice from either method is then wild fermented, which means we do not add any yeast, we just let nature run its course - unlike others, we’re not in any rush and prohibition-style tequileros certainly did not have the modern ability to use lab-made commercial yeasts to speed up the process. Once fermented, it is distilled twice in alambique stills, then the hearts and a significant part of the tail of the distillate are collected, and placed in barrels at still strength. The barrels are a range of rare and interesting ones, each with its own unique characteristics.
